This is proper Central African comfort food done the right way.
It’s here you can enjoy a whole grilled fish, cleaned, cut and cooked hard over heat so the skin tightens and chars while the flesh stays flaky and juicy. Finished simply with raw red onion scattered over the top, not for garnish but for bite and sharpness to cut through the richness of the fish.
On the side you’ve got thick hand cut chips and deep fried plantain slices, caramelised on the edges, and soft and almost creamy inside. Together with dollops of oil slicked chilli sauces and you’ve got that classic Cameroonian balance: smoky, starchy, spicy, perfect. This is food you eat with your hands, slowly, picking the bones, talking loudly, and enjoying your life.
