I’m Nick Hamman and I’m looking for the best skilpaadjies in South Africa. Today I’m in Bloemfontein to sample this beloved local classic at Fenwick’s, a stalwart of the Bloem Vegas meat community for over 30 years.
In true Free State fashion, this spot excels at turning animals into deliciousness. Even if you’re just after some droëwors or one of their many biltong varieties, you won’t leave disappointed — but I’m here on another mission.
Skilpaadjies (Afrikaans for “liver paths”) are a traditional South African delicacy made by wrapping lamb or sheep liver in caul fat and grilling it over open flames. Originating from Afrikaans farming communities, they were traditionally prepared during skaap slag (sheep slaughter) days to ensure nothing went to waste. Today, they remain a beloved braai-time treat — rich, smoky, and deeply rooted in heritage.
You usually get them served on a roll, or — my personal favourite — straight on a tray with chilli sauce for just R18. And believe me, I would’ve eaten ten if my cardiologist wasn’t watching.
