Well, because his mother did and she’s who taught him how to cook. Visva Nair is the business man behind probably the most requested Bunny Chow spot outside of Durban I’ve received. He owns the business together with his wife Maggie, who is from Durban and is the brains behind the recipes.
These are intergenerational recipes, where the spices are mixed by themselves, the cooking techniques of Indian Durban heritage from how things are braised, to how the curry is built is done the old school way here. This is the Burner, it’s in Century city and it’s a serious operation. They’re going through around 10 lambs a day and 40kgs of boneless lamb on top of that. They’ve got 24 burners making massive amounts of food and despite that scale, Maggie still makes sure she over sees the entire process.
