I’m Nick Hamman and I’m looking for the best noodles in South Africa and today my search has taken me to Rivonia Johannesburg inside Rivonia Central to visit Hong-Kong Style Kitchen
This is Hong Kong–style beef brisket & offal noodle soup, the kind you’d expect from a proper Cantonese kitchen. A deep, glossy brown gravy-style soup, slow-braised, soy-forward, and collagen-rich. This is classic Cantonese beef broth that’s been cooked for hours with aromatics, giving it that slightly sticky, luxurious mouthfeel. Then, chunks of braised beef brisket, beef tripe and tendon. It’s less about “meaty bite” and more about silky, gelatinous texture. Thin wheat egg noodles, lightly springy, sitting at the bottom and soaking up the broth without turning mushy
Comforting, unapologetically old-school, and very much a bowl for the soul
