I’m Nick Hamman and I’m looking for the best noodles in South Africa and today I might have just found them. I’m in arguably Johannesburg’s 3rd Chinatown, Rivonia, in search of this masterpiece that you see before you. Sichuan Style Spicy Pork Noodle Soup. These are from a spot you’ve probably never heard of, so make sure you keep watching so you can try this out for yourself.

Tucked in the corner of Rivonia Central, you come through this entrance and you’re your first right to find Qinyuan Resturaunt, named after a county in northern china, famous for its peanuts, which of course you can see adding a delightful crunch to this dish

These noodles are handmade, bouncy and wide, designed to trap oil and spice and make your tummy very, very happy.

The broth is built on pork stock, the house chilli oil infused with spices and classic Sichuan peppercorns that give off that subtle numbing effect I love so much.

This is a place where members of the Chinese community come to catch up on the news of the day, while of course eating damn delicious food

The noodles are meant to be slurped loudly, it aerates the broth and releases aroma. Silence is wasted flavour here. The pork isn’t treated as a centrepiece. It’s sliced to stay tender, not showy, briefly blanched and added at the last minute so it stays juicy adding richness and depth. The pickled greens and leafy veg add bitterness and freshness, the spring onions and coriander cut through the oil and the egg provides a softening comfort
