I’m Nick Hamman and I’m looking for the best Ramen in South Africa and today I’m out at Melrose Crossing Johannesburg to pay a visit to Asian Herbivore.
For starters, this might not look like what you think of when you think ramen. Ramen is a Japanese dish built around springy alkaline wheat noodles, which can be served either in broth or stir fried in sauces like this mie goreng style version.
Before we get into that, we started with deep fried tofu, sweet potatoes, baby marrows, cauliflower and oyster mushrooms served with dipping sauce for R60, six pan fried vegetable dumplings filled with pak choi, soy mince and rice noodles for R45, and two soft bao buns packed with deep fried tofu, cabbage, carrots and mayo for R75.
This spot makes its ramen noodles fresh in house every single day.
Now this bowl takes inspiration from Indonesia, where mie goreng literally means fried noodles and is one of the country’s most loved street food staples. It balances sweet soy, garlic and chilli with savoury depth and that slight wok caramelisation that gives the noodles real character. Tossed with green beans, shiitake mushrooms and pan fried firm tofu, the sauce clings to every strand for a plant based bowl that feels comforting, layered and seriously satisfying.
