I’m Nick Hamman and I’m looking for the best noodles in South Africa and its entirely possible you’ve never seen or heard of these. They’re called Biang Biang from Shaanxi province, in northwest China. They’re belt-like strips of dough, thick chewy and designed to carry flavour and if you want them, order from tea and antique at either their Sandton or Bedfordview branch. Run by husband and wife couple Nini and Jonsen, they take pride in making authentic, healthy Chinese food and I’ve gotta say, they more than know what they’re doing

The sound “biang” comes from the slapping noise the dough makes when it’s stretched and smacked against the counter during preparation. Here its garlic, soy sauce, vinegar, spring onions and then hot chilli oil poured right before serving.

I spent time in the kitchen here for the latest episode of hammyeats delivered by Mr D and I would highly recommend you try Tea and Antique for yourself, for the biang biang, traditional tea ceremonies, and a whole lot of Chinese food that is difficult to find anywhere else but if these aren’t the best noodles in South Africa, I need you to let me know if the comments where I’m going next?
