I’m Nick Hamman and this is one for the foodies. I was craving Sichuan peppers, which for the uninitiated are actually dried husks of fruits from plants in the Zanthoxylum genus and are famous for creating a unique tingling, numbing sensation on the tongue known as málà (“numbing-spicy”) when combined with chili peppers. So, I came to Ginger and Garlic in Rivonia Johannesburg. Unassuming from the outside, this is a beautiful, transporting spot, great for hotpot and my order of classic Sichuan dry-fried chilli beef served with steamed rice, witch Chinese celery stems for freshness and crunch. Firstly, the chillies are there for aroma, so eat around the. The beef has been quickly stir-fried, giving it a slightly crispy exterior. The traditional way to eat this is, spoon some rice into your bowl. pick out pieces of beef and celery with your chopsticks and alternate bites with rice to balance the heat.
